Coffee Cake Muffins
- ⅓ cup sugar
- ⅓ cup plus 8 teaspoons flour
- 8 teaspoons packed dark brown sugar
- 1 teaspoon ground cinnamon
- ⅛ teaspoon baking powder
- ⅛ teaspoon baking soda
- ⅛ teaspoon salt
- 4 tablespoons butter, cut into 4 pieces and chilled
- 1 large egg
- 2 tablespoons plus 2 teaspoons sour cream
- Powdered sugar
Heat oven to 350 degrees. Spray 4 cups of muffin tin with baking spray that has flour in it. In food processor add granulated sugar, 8 teaspoons flour, and 4 teaspoons brown sugar pulse until combined, about 3 pulses. Put 2 tablespoons of this mixture into a small bowl and whisk in remaining 4 teaspoons brown sugar and cinnamon to make streusel; set aside.
Add to remaining mixture in food processor ⅓ cup flour, baking powder, baking soda, and salt and pulse to combine, about 5 pulses. Scatter butter over top and pulse until mixture breaks down into small pebbly pieces, about 8 pulses. Add egg and sour cream and pulse until batter is well combined and thick, about 8 pulses, scraping down sides of bowl as needed.
Pour a generous tablespoon of batter into each muffin cup. Sprinkle each one with 1 tablespoon of the streusel mixture. Spoon the remaining batter over streusel in each cup. Bake until muffins for 20 to 24 minutes or until golden brown and toothpick inserted in center of muffin comes out clean. Rotate muffin tin halfway through baking. Let muffins cool in tin on wire rack for 10 minutes. Remove muffins from tin and let cool for at least another 10 minutes. Dust muffins with powdered sugar.
- 2 bananas, mashed
- 1 Tbs oil
- 4 eggs
- 1 tsp vanilla extract
- 1 cup flour
- Pinch of salt
- ¼ tsp cinnamon
In a large bowl combine the flour, salt, and cinnamon. In a separate bowl, whisk together the eggs and vanilla extract. Mix the wet ingredients with the dry ingredients. Add the bananas and mix until well combined.
In a large skillet, heat the oil over medium heat. Once evenly heated, pour the batter into the skillet. Cook each pancake until you see bubbles on the surface, flip, and continue cooking for 2 to 3 minutes.
